Paleo Egg-free recipes are tough to find, we think this is a keeper whether you have an egg allergy/sensitivity or just out of eggs on day. They muffins are super yummy and very easy. Use coconut milk and flour to make them nut-free for school. Thanks Sherri for sharing.
¼ C non-dairy milk (coconut, almond, or cashew)
1 ½ C flour (mix almond and coconut, or even quinoa flour)
4 Tbsp coconut oil ¼ C chia seeds
6 Tbsp maple syrup 1 tsp baking soda
2-3 mashed bananas 1 tsp baking powder
¼ tsp cloves 1 tsp cinnamon
¼ C applesauce 1 tsp vanilla
¼ C Enjoy Life chocolate chips (optional)
Preheat oven to 350 degrees. Either pour into a loaf pan, or muffin papers and bake 25-30 minutes.
