If you looking for another way to get some healthy greens in you – try this fall salad!
Bunch of Kale, destemmed and finely shredded
1 cup of mint finely chopped
1 apple cut into matchstick sized pieces
Pumpkin seeds lightly toasted in a cast iron frying pain on low heat
1/2 cup of cranberries( dried)
Salt and pepper to taste
1/2 cup of olive oil
1/2 cup of white wine balsamic vinegar
Maple syrup to taste
1 tsp. of honey dijon mustard
Zest of lemon or finely chopped on a cheese grater
Mix together, destemed and shredded kale, finely chopped mint , apple pieces and cranberries.
Mix up dressing and add to the salad, letting it sit overnight will soften the kale.
Add the pumpkin seeds just before serving so they retain their crunchiness!
